I enjoy making bread. I like the method, process, flavor and texture of homemade bread. My kids enjoy helping me, so making bread together is something we can all do in the kitchen. I have tried my hand at many different types of bread recipes over the last couple of years. I like to make things at home that we would typically get at the store or a restaurant.

For about the last two years I have been making these pretzel bites.  They are light and buttery and go great with soup or just for a snack. So when I saw this recipe for Pretzel Bread, I knew I needed to try it. My kids love soft pretzels. That’s one of the first things they ask for when we go to Sam’s. I knew this recipe would be a hit! The first time I made this bread, our babysitter was over for the afternoon to play with the kids. She and I polished off an entire loaf all by ourselves with our dinner. When my husband got home from work he had a few pieces of the second loaf and then the dog snatched the rest when no one was looking. It was a hit! Approved by all! This time around, I made sure to hide it from the dog!

Pete describes this bread as soft and chewy (which he loves) but with a crunchy outer rim. The best of both worlds. It’s like a giant soft pretzel that you can slice. I’m sure this would be fantastic as grilled cheese but I wouldn’t know because it never lasts long enough!

Pretzel Bread
Recipe type: Bread
 

Tastes like a soft pretzel in bread form. Yields: 2 loaves
Ingredients
  • 4 tablespoons butter, melted
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt, plus more for topping
  • 1½ cups warm water
  • 2¼ teaspoons instant yeast
  • 4-5 cups (give or take) flour
  • 10 cups of water
  • ⅔ cup baking soda
  • 1 egg yolk
  • 1 tablespoon water

Instructions
  1. In the bowl of a stand mixer, combine the butter, sugar, salt and warm water.
  2. Add the yeast and flour and mix with the dough hook on low speed.
  3. Once the dough starts to come together increase the speed to medium and beat for 4-5 minutes. If the dough is not cleaning the sides of the bowl, add a small amount of flour at a time until the dough is no longer sticking to the bowl. The dough is done kneading when it is smooth and soft.
  4. Spray a large bowl with cooking spray.
  5. Shape the dough into a ball and place in the bowl, turning once to coat it with the cooking spray. Cover the bowl tightly with plastic wrap and let rise for about 1 hour, or until doubled in size.
  6. Line a baking sheet with parchment paper and set aside.
  7. Boil the 10 cups of water. Add the baking soda once the water has boiled.
  8. Preheat the oven to 450 degrees F. Move the oven rack to the lower third of the oven.
  9. Divide the dough into two equal pieces.
  10. Shape into loaves and place on the baking sheet.
  11. Cover with a towel and let rise for 10 minutes.
  12. One at a time, place the loaf into the boiling water with the baking soda for 30-40 seconds, turning over once. Remove from the water with a slotted spoon and place back on the baking sheet. Repeat with the second loaf.
  13. Combine the egg yolk and water and brush the outside of each loaf.
  14. Sprinkle salt on top of each loaf
  15. Score a shallow “X” on top of each loaf.
  16. Bake for 20-25 minutes or until dark golden brown.
  17. Let cool for about 10 minutes.
