My sister-in-law loves potatoes. If something has potatoes in it, you can be pretty certain she is going to love it. She is always put on “potato duty” for any holiday in need of a potato side dish. While I don’t think she has ever had this dish, I am pretty certain she would love these Creamy Potatoes.
These Creamy Potatoes are an easy side dish. There are only 3 ingredients to this recipe – potatoes, heavy cream and salt. That’s it! Because the potatoes are baked at a low temperature for a long period of time, they get so soft and the cream turns cheese-like in its consistency. It’s almost magical.
- 4-5 medium to large potatoes
- 1½ cups heavy cream
- salt to taste
- Preheat the oven to 300 degrees F.
- Slice potatoes very thin and lay them evenly in a 9×13 baking dish.
- Cover the potatoes with the heavy cream and add salt to taste.
- Bake for 1½ – 2 hours, stirring every 15 – 20 minutes. The potatoes are done when the cream has thickened to a cheese-like consistency and the potatoes are tender.
