Sometimes, you just need a super simple side dish. I tend to get in a rut with side dishes. My go-to side dishes are rice, potatoes, corn and green beans. But, sometimes it is nice to serve something other than the usual. My family is usually happy about some variety.
These Butter & Brown Sugar Carrots are a great way to get my kids to eat carrots. They don’t always eat them raw, so coating them in butter and brown sugar sure does help! While these may not be the healthiest way to eat carrots, they sure are good!
- 1 pound carrots, sliced
- ⅓ cup brown sugar
- ¼ cup butter
- In a medium to large sauce pan, fill with water about ⅔ of way full. Boil. When the water comes to a boil, add the sliced carrots. Cook carrots until they are fork-tender. Drain and set carrots aside.
- In the same pan, add the brown sugar, butter and 1-2 tablespoons water. Simmer mixture on medium for a few minutes until it is thickened. Add the cooked carrots and stir well.
- Serve immediately.
