Here is a new way for you to serve tacos! I have been making these taco potatoes for several years now and they are so delicious. I love tacos (well, anything Mexican for that matter) but I get so tired of serving them the same old way. This recipe is so easy and quick. You can either bake your potatoes in the oven or you can nuke them the microwave. The taco meat mixture comes together quickly and then all you need to do is get your toppings ready. Once you have everything ready all you do is pile it all on top of the potato. It’s kind of like a taco salad on top of a potato!

Taco Potatoes

yields: 4-6 servings

4 potatoes, cooked
1 pound ground beef
1 package taco seasoning
1/2 cup heavy cream
1/2 cup shredded cheddar cheese
1 cup salsa
toppings of your choice, such as lettuce, tomatoes, sour cream, guacamole, olives


Brown the ground beef. Drain beef if needed. Add in the taco seasoning. Stir in the cream, cheese and salsa. Stir on low heat until the cheese is melted. Remove pan from heat.

To serve, cut open potatoes and top with the taco meat mixture and desired toppings.

Leftover tip: Reheats well!
