Welcome to Strawberry Week at Kathy’s Kitchen Table! I have three great recipes to share with you that all feature strawberries as the star ingredient. Today we start off the week with a wonderful Strawberry Cream Cheese Coffee Cake. This cake has so many different flavors and textures, it will be like a party in your mouth! To start, the cake is dense and full of flavor but does not over power the cheesecake layer or the strawberries. The cream cheese middle is like a light cheesecake that is surrounded by the dense cake layer; it is light and tangy. The strawberry layer is sweet and almost jam-like in its texture. The top crumb topping is sweet and buttery!

If you think this cake looks too involved and you couldn’t possibly make it, just know that it really doesn’t take long to assemble at all. It took me less than 45 minutes to assemble the entire cake, which includes cooking the strawberry filling and letting it cool. It also includes tending to a 5 year old, a 2 year old and a golden retriever that seemed excessively needy that day. So, while this coffee cake may look more daunting than the other ones already on this blog, the simple steps are none too difficult and they make this cake absolutely amazing!

Strawberry Cream Cheese Coffee Cake
 

Please note: Read through all the instructions before beginning this cake as there are several steps. This cake is best eaten the day it is made. It does keep in the refrigerator for 1-2 days but the strawberry filling starts to make the rest of the cake soggy.
Ingredients
  • For the Strawberry Filling:
  • 1½ cups fresh strawberries, cut into small pieces
  • 3 tablespoons sugar
  • 3 teaspoons water
  • 1½ teaspoons cornstarch
  • For the Cream Cheese Filling:
  • 1 – 8 ounce cream cheese at room temperature
  • ¼ cup sugar
  • 1 egg
  • For the cake:
  • 2 cups flour
  • ¾ cups sugar
  • ½ cup butter (1 stick), cold and cut into chunks
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup sour cream
  • 1 egg
  • 1 teaspoon vanilla

Instructions
  1. Preheat the oven to 350 degrees F. Spray an 8 inch round spring form pan with cooking spray and set aside.
  2. To make the Strawberry Filling, combine the cornstarch and water in a small bowl to make a slurry and set aside. In a small saucepan, combine the strawberries and sugar. Cook on low to medium heat until the strawberries have released their juices. Add the cornstarch slurry and stir until combined for about 1 minute or until the mixture has thickened. Remove from the heat and let cool to room temperature. Continue with the next steps.
  3. To make Cream Cheese Filling, beat the cream cheese on medium speed for about 30 seconds until it is smooth and fluffy. Add the sugar and egg and beat until well combined. Set aside.
  4. To make the Cake, in a large bowl, combine the flour and sugar. Cut in the butter until the mixture looks like coarse crumbs. Set aside ¾ cups of the flour mixture. Add the baking soda, baking powder, salt and mix well. In another large bowl, beat the sour cream, egg and vanilla until well blended. Slowly add in the flour mixture using a whisk or spoon. The batter will be lumpy and very thick.
  5. To assemble the cake, spread the batter in the spring form pan, pushing the batter ½ inch up the sides. Make a well in the center of the pan, leaving ½ inch boarder around the edge. Pour the cream cheese mixture into the well. Spread the strawberry filling on top of the cream cheese filling. Then top with reserved portion of the cake crumbs. Bake for 50-60 minutes or until golden brown. Cool in the pan for about 20 minutes before removing the cake.
