This Hero Sandwich has been a favorite of ours for several years now. We all enjoy it! This sandwich is very quick to throw together and super easy to make. My husband enjoyed making this on the night we ate it for dinner. I served this on homemade rolls which took this sandwich from wonderful to fabulous. If you do not want to serve this on rolls, it is also wonderful on a bed of rice. It is even great just by itself!
Sausage, Pepper and Onion Hero Sandwich
1 – 2 tablespoons butter
12 – 13 ounce package turkey or chicken sausage, sliced
1 tablespoon olive oil
3 – 4 cloves garlic, minced
1 large onion, thinly sliced
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
1 orange pepper, thinly sliced
1 tablespoon balsamic vinegar
sub or hoagie rolls for serving
Melt butter in a large skillet over medium heat. Add sliced sausage and cook until brown, about 5 minutes. Remove sausage from the skillet, put on a plate and cover with foil to keep warm.
Add oil to the skillet and heat until hot. Add garlic and cook for 30 seconds. Add onion and saute for about 3 minutes. Next, add the pepper and saute until the vegetables are softened, but not mushy.
Stir in the vinegar and return the sausage to the skillet, tossing to combine and heat through. Serve on rolls.
Leftover tip: This meal reheats great!
